Zuporian Spiced Lamb Skewers

Succulent lamb marinated in a blend of traditional Zuporian spices, grilled to perfection over an open flame.

Ingredients

  • 1.5 lbs lamb leg, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tbsp Zuporian spice blend (cumin, coriander, paprika, cinnamon)
  • 1 tsp dried mint
  • 1/2 tsp sumac
  • 1/4 cup plain yogurt
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a large bowl, combine olive oil, minced garlic, Zuporian spice blend, dried mint, sumac, yogurt, lemon juice, salt, and pepper. Mix well to form a marinade.
  2. Add the lamb cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, or preferably overnight.
  3. Preheat your grill to medium-high heat. If using wooden skewers, make sure they've been soaked in water for at least 30 minutes to prevent burning.
  4. Thread the marinated lamb cubes onto the skewers, leaving a small space between each piece.
  5. Place the skewers on the preheated grill. Cook for 4-5 minutes per side for medium, or until desired doneness is achieved.
  6. Remove from grill and let rest for 3-5 minutes before serving.
  7. Serve with Zuporian flatbread, yogurt sauce, and a fresh salad.

Chef's Notes

For authentic Zuporian flavor, try to source genuine Zuporian spices from specialty stores. The key to tender lamb is not to overcook it - medium-rare to medium is ideal. If you don't have a grill, these skewers can also be cooked under a broiler or on a grill pan.
